The stuff in page 17 are not croquettes but what in Portugal they call "bolinho" and in Spain "buñuelo". They're bascially a fritter or doughnut: a dought poured into hot oil that gets fried, with a crispy exterior and a soft interior. Truly delicious! Croquettes are equally good (maybe even better) but much more laborious. They're a thick bechamel, shaped into small logs, breaded and then fried. Not something you can prepare on a whim! And for the best results, they should be prepared a day in advance before frying them.
