Kimchi is the heart of Korean cuisine but at the same time, because it's so important and therefore recreated wherever we go, I think it's really open to variation depending what's available to the person making it. My grandmother made some of the best kimchi I've had in my life growing up; her baechu kimchi recipe included octopus on account of the region she came from and chili peppers homegrown, dried, and ground from a non-Korean variety available where we lived.
A bit long, but all to say it's very fun seeing a cuisine and culture I'm close to depicted.
