I have a question– when your translation in regards to Japanese dishes says parsley, is it typically mitsuba that's being used?

That's right. I usually translate mitsuba as parsley. I'd assumed they do mostly the same thing, and the common English name for mitsuba is 'Japanese parsley', but if you're bringing it up, I do wonder if perhaps there's something about it that stands out.

Thanks for confirming, I was really just curious. I see 'mitsuba' more often in recipes online these days, especially as Western audiences have become more open to foreign names. But I suspect it's also largely a practical choice on recipe developers' part to keep home cooks from substituting in common Western parsley varieties as they truly don't work in mitsuba's place lol
