You can apparently pull out the marrow from bigger bone cuts as these solid chunks that looks like little sausages. I'm assuming you'd have to cook it first or something, and then it gets sliced up and served.

Fascinating! With that hint, I managed to find a recipe where they do just that and serve it on filet mignon. You need to soak the cut bones in ice water first to release the bone marrow.

I'll be adding an addendum to the Gourmet Notes shortly.
