That might just be taste preference then. I tend to prefer if sea urchin tastes strongly of the sea. I've had a few sea urchin sushi where the sea urchin barely tasted of anything, which was disappointing.
Curiously, I've never seen sea urchin served cooked before. I think I'd still prefer the texture of raw sea urchin, but I wonder how it would taste cooked?
