However, when it comes to the chapter title, as a side note, take it with a grain of salt, because I can't read kanji at all and I did use four different translation apps to try and figure out what it meant because the initial translation was not successful... I can only partially read hiragana and a smidge of katakana characters, but kanji is totally outside of what I've learned... So, just don't take too much stock of the chapter title...
Maybe,My guess would be because of where the clams grew? Cus I think shellfish taste really depends on the environment they come from. Shijimi being brackish water clams myb those came from more muddy water, so like freshwater fish they lean towards earthy than fishy if that makes sense
