What happened to the previous chapters? A ton of them just completely vanished.

The website was hit with a DMCA takedown request. Several people have already moved to other sites and abandoned Mangadex in response.
For Oishinbo, we're gradually reuploading the previous chapters onto batoto. I will continue uploading the latest chapters on Mangadex as well, but it's expected that these later chapters will also be removed eventually by another DMCA request.
