My own feeling is, and I could be wrong, is that Yamaoka's perspective on his parents' relationship is skewed, and that Kaibara was actually just as badly hurt by his wife's death. So Yamaoka destroying his pottery took him by surprise and he lashed out the way he does and he can't walk back on it, and he also realizes that Yamaoka would not accept it until he genuinely beats him in a cooking matchup.
