What's this?! Kaibara didn't credit Chinese cooking for his creation?! He's a plagiarist!! Boo! Boo!
That kind of rice flour skin gyoza is a pretty traditional item in Chinese cooking (edit: misnamed the food, it's the steamed dumpling of the Hakka people). Even if Kaibara put his own twist in it, it's not like he made up something new.
Usually they do credit the original if their food gets inspiration from non-Japanese cuisine but here everyone was acting as though Kaibara created something completely completely unheard of. The only Chinese cooking credit they mentioned was how soup was put in it like Xiao Long Bao.
Edit 2: After thinking about it, to be fair I guess maybe they didn't know because it's not commonly known in Japan at the time of original publication.
