I take it it's because only people who work in Yuzan's Gourmet Club or people who are his close associates (like Toyama-sensei) know about how Yuzan is actually like.

But even then, many of these people just let Yuzan be like an ass for most of the time because of his prestige, sheer skills, and the sense that you can't ever "touch" this kind of people lmao.
