...yeah, I'm not sure I buy this one. This isn't specific pasta knowledge; it's just knowing how eggs work. Plus it's unfortunate that he went for a cream sauce; would've been more like Yamaoka to at least delve into the original way of making it and the use of starchy water.

Coming right off the curry arc, it’s fascinating to see the differences between these two arcs (and I’m not talking just about length).
In the curry arc, there was clearly a lot of effort put into the research and authenticity of Indian and Sri Lankan curry, and that actual Indian and Sri Lankan chefs (both professional and non) were consulted.
Aside from talking about the ingredients of pasta (which Kariya could’ve easily gotten from a book), there’s no evidence an Italian chef was at any point consulted.
