Scientific veracity aside, I do like that Kaibara's approach turned out to not be Okinawan food at all. It means we get to see more variety between the two Menus.

Beauty of nature is good and all, but some sort of development is necessary. You need accommodation for the tourists, after all. If you don't like hotels and "resorts" (whatever the definition of that means), at least you'd need at least some sort of clean cabins and well-kept roads. Not many people want to rough it out in "nature" and stay in ugly huts.

Even if you want to preserve the dirt roads and not asphalt it, it needs to be not bumpy and full of holes. Like, that kind of maintenance stuff needs work. You can't just leave a dirt road be and not do anything to it just because "tEh nAtuRe". Nobody likes going through muddy roads riddled with puddles.

Believe it or not, right next to my house is a small restaurant specialised in Silkie chicken soup. Sometimes, on special occasions, like my birthday for example, I will go there and order either silkie or pork brain, all cooked in the same herbaceous soup.

That actually sounds incredible. How does pork brain taste?

It's very rich and creamy with a nice soft texture to it. Usually I enjoy it by pressing my tongue to the alveolar ridge to gently mush the brain, releasing the creamy taste on the tongue. The soup is lightly flavoured but if you need more salinity, you can use the salt-and-pepper mixture to amplify it.
