In Gifu a number of restaurants will put wagyu on hobayaki, don't fall for it imo. Hobayaki is best with miso and vegetables.

So his name was Chauvin and not Shoban! For the life of me, I couldn't figure out what his name was supposed to be when I did that chapter. I'll see if I can go back and change it when I've got some spare time on my hands.

When a popular food smells bad, it kinda makes me more curious LOL
Like, it must really be good for somebody to gobble it up in spite of the scent.

I love cheese and stinky tofu. I love truffles (the one time I had genuine ones), and while I haven't had matsutake yet, I love mushrooms of all sorts so I'm pretty confident I'd love them too.

At some point, the stink just becomes a character of the food, something to look forward to.

I can't deny that I also have fun watching my friends' faces turn as I eat the stinky cheese.

Same on all counts. Stinky tofu in particular is oddly addictive? I first tried it for novelty but ended up hooked on the flavor.

You know, I really like the theme of this chapter. It's really common to reject other cultures foods by calling it 'smelly', and it usually comes down to spices you're not used to, methods like this you didn't grow up with, and outright racial prejudice. It's genuinely a lovely message to talk directly about smellier foods, and the shared commonality between them.

Personally I think the smelliest food I ever ate was a goat cheese brie. It was incredibly delicious, but for a few hours a kind of gas station smell lingered...
