Damn! This was more erotic than many manga that claim to be erotic.

To be fair; animals can't commit sexual assult as a general rule. Reproduction is generally going to be seen as a good thing, it's the telos of being an animal after all. There are just high quality and low quality mates. This doesn't mean shady mating strategies don't exsist of course. As such depending of how animalistic she is, you could make a case that she technically can't commit SA from a philosophical stand point.
I'm pretty sure the concept of sexual assault is usually considered from the perspective of the recipient (i.e. the victim) rather than the being enacting it.

It doesn't matter whether or not a creature is aware enough to distinguish right from wrong, or whether or not the being in question has any concept of sexual assault themselves. If they're performing sexual acts on a being who does have a concept of sexual assault, and said being is an unwilling participant in and/or has not consented to said acts, then the recipient of those acts is being sexually assaulted.

I suppose you could technically make an argument that she might not be cognizant that she's sexually assaulting him based off the whole "animalistic" thing (though I feel like that argument wouldn't hold a lot of water, given that she's already displayed a full understanding of human morals and societal concepts, even if she tends to behave mischievously), but that would have no bearing on whether or not he actually was sexually assaulted by her.

After all, if a dog has sex with a woman against her will, and no third party is involved (i.e. nobody trained the dog to have sex with humans, nobody was guiding/directing the dog to have sex with the woman, nobody set the woman up in a situation such that she'd be likely to be raped by a dog, etc.), then you can't just claim that the woman wasn't sexually assaulted.
The most that could be claimed in that situation is that the dog is not morally responsible for its actions, as it was merely following its role as an animal.
Edit: Either way, the woman in that scenario has been SA'd, but if there were a third party involved then they would be the ones on the hook for performing the assault.
