I wonder why they don't write stories after they started dating something like Clannad Afterstory. It's nice and cute to see the couple fall in love and such but I'm interested in how it develops as well.

Because most Japanese mangakas have no experience in relationships. That's why writing a love story after the confession is beyond their capabilities
