Originally they only fought Monsters. Heroes can't copy from Monsters, only the MC can and only when actively using his skill. As for why they didn't tell them ... I guess they didn't need to and didn't want to since all humans with skills would suddenly become a tasty source of power for the more amoral heroes. Onizuka demonstrated quite well they where afraid of that for a good reason.

Also that they get skills from non-heros so how is it that noone got a skill from a monster or demonfolk?

The writing on this is getting even worse, I was actually suprised when MC did a kill blow but somehow ofcourse Onizuka goes demony-eldritch mode so I guess it doesn't count as him killing a human? -5/10 score at this point. How far can we fall bois.
