It’s like case where author found a character is far more versatile and practical to move the story, so he ended up giving her more spotlight (since she gets the job done). Her natural and acquired skill of being perceptive especially, helps to dump explanation to readers (and thus more interaction with Yuuto). The others are more like background explosion filler, or breather room provider.

Also I mean she didn't show much attention to him back home but you could see she was a little interested in how he barely paid attention to her when every other guy was drawn to her. Also I like the fact that she wasn't an easy girl that slept with just about anyone (which I'm sure will happen with Yuuto in the near future).

Honestly, can’t really pinpoint when. Her affection growth is more gradual, and she always kind of holding back for Minase. Yeah maybe, I just noticed in the later chapters that she has more normal romantic reactions to some actions from him, I mean I know she originally sided with him because she thought he was useful and also she was scared of him, but I just noticed that more and more with time she seemed to come to trust him more, and I think that's where she began noticing his good traits, I don't know maybe I'm looking too much in to it. For just interest, it would be when Yuuto came back strong enough to stand up against the class leaders, Miyamoto and Onizuka. Akane is pragmatic and have things she want to do herself, so she can’t just “love someone because he’s nice” like Minase; that kind of guy would just burden her and she’s better doing it alone.
She choose siding Yuuto because he’s the better choice in their new situation (thrown to isekai, empire can’t be trusted, the class boss is not build for this job).
And after that, most of the time she is putting her attention to the group, helping them grow stronger.
So... I think either the kiss when fighting Oldina, or the battle against Rei when she finally put it together that Yuuto has her priority, and even when things turns sour she will still choose him this time rather than prioritising herself.
