The filling is fried rice, I guess you could add potatoes there.
I've seen the omelet served over something that resembles curry too.
Mind you, I live nowhere near Japan and I've never eaten omurice, there's this guy I watch on youtube sometimes that reviews japanese restaurants - And that's all of my experience there.

The filling is fairly flexible. My ex-wife and I used to make it with essentially fried rice. there's be small pieces of chicken, onion, green peppers, etc. Potato does seem a bit weird, tbh.

There are a lot of "standard" dishes where every family has their own recipes. It doesn't all have to be textbook omurice, hamburg, fried rice, or curry rice.

As others have said above, the filling is whatever you want.

Small pieces of boiled potatoes can help space out and smooth the texture of fried rice, if you have a lot of other heavy flavors and textures.

It's not common, especially since the rice is already carbohydrates, but when the potatoes are on sale and you have a lot...

One of the aspects of manga (art in general, but I feel like I bump up against it especially often in manga/anime) that I have the hardest time suspending my disbelief for is the passage of time. The chapter was sweet, it was nice to see them confirm their intentions, do shit together, talk about important things; all that good stuff.

I have a hard time believing that her mother passing away two years ago wouldn't have come up a lot sooner considering the amount of time they spend together for as long as they've been spending time together. She would've referenced that at some point.
