@silverden: Sorry, I just wanted to give you a short reply, stating my theory, but it yet again became a wall of text.

Why I believe the hero has always been gay to begin with:
Did you notice, how the curse picked one trade of the others? A strong warrior/man's man is turned into a weak child (A woman can still be strong, so it had to be something else. He can be glad the curse didn't turn him into an elder person.) A man gets turned into a woman. And the princess's holy attribute flips into the dark side and drags her emotions into that realm. (I personally also believe, that she is possessed.) Only in the hero's case the curse seemingly picked a lot of trades. I assume it also only picked one of the hero's, but this caused his whole behavior to change.
Imagine a person with a very high sense of duty. So high, that he would do everything for the people around him and set aside his own wishes. He would try to fulfill the roles others see him to carry. Now that guy is branded as hero. (If he has been assigned the role of the hero from his childhood on, that would also explain, why he is such a dutiful person. He has been raised this way.) He'd always try to keep up a bright image, because this is what his nation needs. And he would also always hold back his own desires if possible. (I know, that holding back all of your major desires all the time is BS, but this is just a fictional story, so give me some leeway on this one.)
1. He'll slay the Demon Lord, because he is able to do it and it is expected of him. Others would die with a higher possibility, so he is the natural choice.
2. He tries to be an example of a righteous person, without anything that would be considered scandalous, e.g. being a drinker, a flirt, gay (medieval fantasy setting).
And 3. Everyone want to see a Happy End of his hero story and that means he is expected to merry the princess. That's a lot, if he isn't in love with her, because this would mean his mission never ends, but...
a) he totally believes he would (and can) do everything to make her happy (What a joke.)
b) He'd also be in a position of power (become King) and that is nifty to help the people.
And now imagine that trade of character >dutifulness< gone. No, it is even flipped into a "Zero fucks given"-trade. A transition from "I have to serve the people." to "Those guys owe me!". Before it would just take a manageable amount of willpower to keep up that image of his, as that trade helped out a lot. Now that very trade sabotages this endeavour. Now he would have to muster a shitload of willpower to continue this and honestly, wtf should he care about doing so? He already slayed the Demon Lord. He fucking fulfilled his duty. By all means, isn't it the other peoples turn to calm down their own princess? And why should he even marry her to begin with? To be a slave to the people for the rest of his life? He is the Hero! He can do whatever he wants. He has the power to do so and the people, quite frankly, owe him a few things anyway. He is free, he can drink as much as he wants, party as much as he wants and fuck as much as he wants. He honestly hold back long enough....That's how I see it.
This still doesn't explain, why he isn't in love with the princess anymore and is hardcore gay. But if we assume he wasn't in love with her from the beginning, also maybe because he was gay to begin with it all starts to make sense. Those "additional" character trades didn't get flipped, they just got dug up and exposed.
