Gotta remember that we mostly see the story from the MC's point of view, but the truth is the FMC is just as crazy in love with him and feels similarly insecure. She just does a better job of hiding it.

Plus, while she was teasing him, she didn't expect it to get to him as much as it did. Hence why she wasn't mad after the fact (and was in fact thrilled) and mentally apologized. Like when you play a prank on someone in good fun, only for someone to actually end up (albeit not seriously) physically injured.
