Wait isn't she like i dunno ten or twelve at most noble born and stuff in what world especialy the high nobility would she be allowed operate a shop with no adult supervision. It makes no damn sense cut out the nobility just make her some rich merchants child it still makes no sense. Child neglect? One less mouth to feed? Otherwise, it makes no sense let without supervision, such a national asset, and a female one.

I love how people start pushing their glasses up their nose and are all like "Eh, actually, that's not a Danish" or "That's not the exact process for making cheese"... Rather than just enjoying this for what it is, a work of fiction that doesn't necessarily have to be entirely accurate for it to be enjoyed. Let alone bad enough to compel a re-read so you can pick out the technical mistakes the fictional creator may or may not have made. She's going by her book. In her world, that's how she's made cheese.
