That'd be "wootz, folded or watered steel". Even if there's some guesstimates that the very first "Damascene" swords might have been crucible steel, the brand name that lives on today is all about the patterns."Damascus" steel? You mean crucible or wootz steel right? Unless Damascus exists here.
But then, in the name of clarity, it's easier to just use the "Damascene" name even in the manga, because that's what it says on the fancy cooking knives the average Japanese can see in stores.
(And it's still a less egregious crime against sensibilities than the other common manga problem of comparing all fantasy world currencies with Yen. Especially the ones that have it as "1 gold = 1 yen".
