I understand why but skipping over captures of first three Regis doesn't sit that well with me
It always feels like Pokémon Special does this where it goes okay with its plot at first and then when they realize the next game is coming up they immediately go into maximum overdrive

It could help if the author wasn’t intent on going one-to-one with the game plot. Gen 1-3 felt a bit looser.

I like that Soudo is rude and critiques how predictable things are and some NPCs look the same, good call-outs that the Galar games deserve.

I don't know why and how the trio legendary birds have galar variants. Is it explained in the game? And i maybe misunderstood something but isn't regice, regirock, and registeel was uncontrollable that Steven had drawback in the past? Why is them can be possessed by someone pretty easily now?

In the game it's because they ate the fruit on that tree.

The fruits have Dynamax energy so you can sort of look at it like they are in a permanent Gigantamax state in a sense.

It's because the birds aren't actually Galarian variants of the Kanto Bird Trio, it's just Peony THINKING they are and since he discovered them, he gets to name them

"The sinister aura that blazes like molten fire around this Pokémon is what inspired the name Moltres."
"When its feathers rub together, they produce a crackling sound like the zapping of electricity. That's why this Pokémon is called Zapdos."
"Known as Articuno, this Pokémon fires beams that can immobilize opponents as if they had been frozen solid."

They're more like convergent evolution from Scarlet/Violet
