So the key is to take advantage of the differences between their world and ours. And I suppose they could harm each other as well.

But I don't know how you'd get one to fight on your side. You'd have to basically lead one to another and hope that they fight over you. And then you'd still have to deal with the one that wins. In general it's probably a bad idea to introduce more of them into a situation.

True, but it would be cool if there was one that for whatever reason doesn't care about the goal they are working towards and instead finds it fun to hunt other monsters.

Also, it seems like they've been sensing fear this whole time. So every time one turns and says something like "Ah... Is it you?", it was sensing fear and trying to find the source, since that means that someone saw it. Presumably it can only sense the fear of those that have a connection to their world.

This explains why stabbing yourself works. Adrenaline from the pain overrides the fear.
