So is Ryukan a centipede yokai like Mr. Snek is, obviously, a snake yokai? I wonder if there are any other animals in Japan that are famous spiritually like that. I know crows = tengu, there are spider ladies, and of course snake gods, but are there others I'm forgetting?

There are actually quite a lot of creature myths in Japan. To name some of the more famous ones you have evil foxes like Tamamo-No-Mae, good foxes like Kuzunoha and Inari-Okami (who is a god but foxes are consider their messanger), crows like the Karasu-Tengu and Yatagarsu, Kappa can be likened to turtles. In stories dogs are usually likened to good omens and fortune like with the Old Man and the Cherry tree. Birds are also a common one such as the Tongue Cut Sparrow and the Crane Returns a favor. You've also got Koma-inu, which are those lion dog statues you sometimes see around Buddhist temples and shrines. You've got Raijuu, which are some kind of manifestation of lightning. You've got spider yokais too, which can be good or bad depending on their lore. And let's not forget the cat yokais. We've got a budding Nekomata in this manga, after all. Japans "8 Million Kami" means that basically any and everything can be a god or demon, and often it comes down to local legends.
Omukade was specifically a monster centipede that could wrap around mountains, and was defeated by Fujiwara no Hidesato/Tawara Touta after he covered his arrow in spit, as for some odd reason it saliva could bypass its armor.
For snakes the most famous is the Yamata no Orochi, who was slain by Susanoo after getting it drunk, Nure-onna which are snakes with the head of women, and while not directly a snake Kiyohime turned into one to chase down Anchin.
The bracelet Kaoru wears that is made from Dara-san's hair seemed to be the trigger. Then again, Ryukan might have allowed it too. He may have sensed Dara-san's power from the kid and was like "what the heck?" and so let him in to check him out.
