I worked in kitchens for a long and every time I read this I have to push the thought "How the hell is she still in business?" to the back of my mind. It's odd to me how romanticized cafe and restaurant ownership is, it's not an industry you can go into without a solid business plan and money managing skills and expect to be successful a year later.

I always cut on costs because the taste can be distorted. I realized it when people even buy cup noodles no matter the red flags. So I make my foods at least have a hint of cup noodles.

It's called hotpot in our town. Doesn't matter because the pricing is per ounce, regardless of the ingredients chosen.

Tip: dip those food in cold water blended with a bit of instant ramen salt. They last longer and I don't believe only MSg is in there. Companies added stuff that actually trigger brain cravings in those powder, like Coke cola.
