To be honest, I'm not in full agreement with Zofie for adding ingredients other than octopus. I'm in the exact same boat as Nyx as I don't like octopus, but still I can eat takoyaki as all the stuff I don't like about octopus is masked. I think it's an unnecessary sacrifice if she really did want people to try out "real" takoyaki. What do you all think?

Well is good in the long run, starting off you can't be picky with your client but once you settle down with concurrent clients, you can keep it MOSTLY takoyaki.
But changing the entire front is crazy

I believe flexibility with the ingredient is important for any recipe, here in malaysia our street takoyaki vendor also did the same thing except the cheese and chocolate one, haven't seen them yet. Some even make distinction to change the name from tako to whatever ingredient in it. Sure gatekeepers will say it is ruining the tradition but i see it differently, it is the recipe evolving to suits its environment and culture. To me takoyaki is not the octopus but the crunchy texture drench in rich sauce

This is still tame, try one that is made from ramen (surprisingly good).
Or 1 of the russian roulette, takoyaki filled with hot sauce. There is no need to be so strict with takoyaki, this is not pasta pronto.
