Why is everyone surprise that baking soda is used in cooking, it’s in the name. Does the Japanese term not connect the cooking aspect to the name?

Looking at the meanings of the kanji used in the full-length name (重炭酸曹達), it does indeed seem closer to "sodium bicarbonate" than "baking soda".
Also I'm guessing that "baking soda is also known as baking soda" comes from her using the shorter name (重曹) first, and either the aforementioned longer name or a straight-up katakana version (ベーキングソーダ) in the latter case.
