As he said, he'd be delaying the whole merchant group and depending on their schedule it could get tight with entering the next city.
Forfeiting that profit might seem unfit for a merchant, but prioretizing the group's time over his additional profit (he's just a guard after all) should give a good impression

He can just hunt at the next destination.
Taking the wolf meat is only worth considering if it's a multi-day trip (which tbf it most likely is) and only if they have a cook and a dismantler in their group (and having a dismantler in their group is unlikely, unless they have a combatant in their group already)
Some how I'm thinking this knowledge is from RRR to some degree but at the same time this is a real thing in hunter and gather groups

Considering the villagers treated the wolf meat as a delicacy, it's not wolf meat like we know it here on Earth; Even if it just ends up getting sold off, it'll be worthwhile. Similarly, the hides were very valuable, especially in a pristine or mostly-pristine condition as he's able to get them. The Merchant, if nothing else, should have claimed them as his own bounty given that they attacked his caravan and MC was acting as guard, and then graciously given at least some of the meat to the guards through meals. As for "only if they have a cook"... Pfft. Even if it's just roasted over an open fire or tossed into a traveler's pot with some water and root vegetables or other ration-type ingredients, they can easily cook it themselves. Doesn't need a specialist to do that.

Only reason H-G groups would not stop to harvest a bounty like this is if they were at capacity and unable to rig up a travois or similar to carry the carcasses. In our case, we have a wagon so light on items that there is room for multiple people to do wacky stunts like leaning way out while two others grab his legs to keep him from falling; it would be solely a positive to take them.

been a long while, but I doubt that his appearance changed. Are you sure it wasn't just his aura that changed?
Look at chapter 4 page 21 and 22, changing jobs gives him a mantle.
Gerda (the apothecary) even remarks (page 26) that he looks different.

In chapter 3 page 7 he is a magician and has left titty armor, changes his job to swordsman and on page 13 has full chest armor. On page 18 he changes his job again and you can see the armor transforming.
There are other examples but this will have to do for now.

It seems like he should've just killed that last one with another spell, even if it might skim the wagon. If he's supposed to be keeping his abilities secret, mixing spells + expert archery right next to a group of trained information-gatherers seems like an easy way to make them suspicious.

I begin to wonder just what evolutionary mutation(s) didn't happen in our world that did happen in so many others that allowed Horned Rabbits to become a thing. Styles may vary from one series to the next, but they're essentially all just "take the concept of a Jackalope, but instead of antlers give it a unicorn horn."
fwiw, unicorn-horned rabbits in anime/manga are based on the almiraj, which is a folklore rabbit that's been around a lot longer than the jackalope:

though that doesn't mean anything wrt your original question, but it's likely that the prevalence of horned rabbits in mythology is based on the shope papilloma virus (linked on that wiki page) , where rabbits will grow random horns (and back then, a conveniently-placed one of these on the forehead would definitely lead to stories / gossip):

there's a decent amount of diseases out there for various animals that cause them to grow random horns from keratin going out of control, that's just one that hits rabbits. So in fantasy land, it's possible that these rabbits just underwent a mutation like that that wasn't caused by a virus, and they found out it was real easy to stab each-other with to get mates.

isn't the point that he seems to be the only 'job hopper' ? i think it'd stick out too much if his outfit changed everytime versus his 'knowledge' or so versus "i'm going into a fight so i'm putting on this robe for armor"

Yeah, seems really silly considering how much they were worth before. Plus, they can use the meat for the next several meals instead of relying on rations.
it doesn't seem like a waste unless he thinks the city's outskirts would have a ton more monsters to collect parts at his leisure

I like the idea of "collective intelligence" of the human race. It's not exactly a hive mind, but the accumulation of history that civilization has built up into an instantly accessible knowledge you can tap into.

It's like a psychic internet, but heavily specific to a type of knowledge.

What happens when the collective knowledge is wrong though? Does it make the job knowledge also faulty? Pretty sure we believed a lot of nonsensical things just through mob mentality. In fact, we still do.
I feel it is sorta like a hivemind, but without the No free will part. When a youngling needs knowledge the old job holders, a part of them that exist in the skill, awaken and start passing knowledge on till they don’t need to actively ‘teach’ the youngling.

Yeah, it's a unique twist on the overused skills and job systems trope. Usually, it's just chalked up to the divine bestowing those abilities. But the concept of the skills depending on the collective knowledge and intelligence of humanity as a whole is kinda special. The skills and jobs would be useless without the knowledge accumulated by those who never had the privilege of being job holders.
