Generally a manga is serialized in a weekly/montly magazine with a bunch of other chapters of other manga all together, then when there are enough chapters to fill a volume they publish it as a tankobon which has a better quality, paper, corrections, uncensored, etc and only has the manga that you want to read.
Same with airing anime and blurays.
