I was in Hong Kong for a wedding some years ago, and at a bunch of local eateries they offered something called an ABC meal: basically set meals where you choose (for example) the type of noodles in soup, the meat, and a drink (the menu section would be split into A/B/C/sometimes D boxes with your options). I ordered either macaroni or instant noodles, ham, and Hong Kong-style milk tea, and then it also came with a fried egg and toast? Something like that. So you're not too far off from one style of Hong Kong breakfast.
For the rest of the trip, having friends bring me around to eat just blew my mind about what could be considered breakfast and also just food in general. Fond memories. Beautiful, old city too.
