And the Living Dolls are actually the 'real' persona, pure and unrestrained self, hence why they easily show their emotions.

The whole training as a maid is basically learning to conform to rules of society. The 'outside' informing the 'inside' what should/shouldn't be done.
Then the 'debut' is going out into society proper, to mingle among those who also have put on their masks.

And despite the sinister feel, it isn't portrayed that way at all. We get everything from the perspective of a happy brainwashed girl who's always lived like this and finds this all perfectly normal. Eerie.
