The full-body plate armour is the biggest factor, but honestly? I think it's a combination of the various reasons you've listed.

Facial anonymity? Check.
Remote battlefield where only frontline troops were stationed? Check.
Most / all dragons who fought Leon died? Probably! As far as I know, we don't know the exact circumstances of his capture yet, but it seems likely that it took a Ruler-class dragon to take him down. ...Unless the author goes comedy route and gets him captured in a really dumb way (I hope not).
Dragon arrogance is definitely in play here - there's no way most of them would remember the faces / names of "ants", after all.

I'm kinda wondering how it will go down when it is finally outed that he is human. Like he would be spared immediate death since killing him will kill the dragon, so they would need to find a way to break the spell. Also I figure he will have built a good reputation by that point too.

Also I figure at some point he might have to fight humans that try and kill his wife or daughters.
