But why does the age of the root matter? Is this a cultivation thing?

Eating ancient weird disgusting things to gain power is a classic trope of cultivation fiction, of course.

In real life, according to a nature.com paper I found:

"The older the root, the higher its medicinal value because of the higher concentration of ginsenosides, which are the active chemical compounds in ginseng."

That's about as scientific an answer as one gets when dealing with traditional Chinese/Korean medicine.
