Maybe they wouldn't get food poisoning from the chicken if they properly drained the blood and cleaned it, because if they did drain the blood then the head would be cut off and generally you bound the legs so that you can hang it upside down. But seriously you don't eat anything, especially chicken, without draining the blood.
