From context, I'm guessing that they don't make use out of any part of a monster's body. It's already been mentioned a few times that humans can't or won't eat monster meat, and we've seen no evidence that they make magic items out of monster bits. Or any magic items at all, really. I wouldn't be surprised if most slain monsters were just left to rot wherever they fell. Given that most humans see demi-humans/beastmen as slaves at best, if not monsters themselves, it's unlikely that anyone even knew about their legends of the stones having magic power. If they did, I rather doubt that they would put much stock in it.
