Is she really justifiable?
I mean, in a political marriage between two nations, the Princess of a Empire wouldn't usually be engaged/married to someone who is not Royal of another Kingdom.
While MC's position is high in his Kingdom, and is engaged to the Princess & Duke's Daughter, but that's within his own nation. Same with the Elf Girl, as while she is technically also a Princess from an independent region, but she also falls within internal workings of the Kingdom. Plus, the core powers in Kingdom knows MC's true nature, which is why they had engaged him to higher status families within the Kingdom.
As for the Saint, she isn't really a member of some royalty or anything as far as i remember. Plus she has the backing of "goddess had informed me" line to help her get married to MC.
Basically all the engagements until now that MC had gotten into had been forced on him one way or another, in a way to keep check on him. Though everyone keeps blaming it on him for doing it as well.
MC has yet to select a girl to engage by himself, especially considering his own position.
Your forgetting one very important thing that was stated in this chapter, the demon empire is 100% a society based on the strong ruling with the exception of the imperial family for reasons that haven't been described yet, this also means the demon princess had she not fled, would have been married to the strongest vassal provided they aren't married for political ties, cain is, in every sense of the word, the strongest human and stronger than any demon so far, putting him as the perfect human candidate for a political marriage as while his standing might seem low in the human world, for demons cain is literally the perfect candidate, that said if i remember right, cain get's a rank up again after the demon continent arc to either margrave or duke, think he was promoted to margrave after dealing with corigno in the manga (it was a lower title in the wn) so he'll likely be made a duke by the end of this (which, as the king said all the way back in chapter 18, cain was going to get a duke's title at some point either way and he's VERY serious about giving him the throne if he'll take it, which he now has a claim to once he marries teles.
