probably some shit that lets him talk to her ghost, she forgives him cause she’s a GOAT mom, and he can return to his restaurant free from all lingering attachments

my speculation;
It's a letter to his mom that he's shoving through the tiny portal when his elf and dwarf buddies are yanking him away. It makes its way to her so that's why she wasn't looking for him.

and this bit is way more out there, but maybe some of the food he teleported is stuff stolen from her fridge (back when she was still around of course). And even more out there, she tried to send letters with the food, but his teleportation was too targeted at the food (and its associated packaging) to grab anything nearby. He'll find a pile of letters to him in the apartment (I'm guessing it's been left as is for whatever reason)
