It's not that I don't like having the odd occasional cute chapter like this one, but I do have to wonder at what point this series will actually be like... OVER over.

Probably when the author is too busy with other projects to continue making these, if I had to guess. Speaking from experience as a writer, once you're done with a work, the story might be done being told to the reader, but after spending so much time with them, the characters are never really gone, they'll always be in and out of your head, doing stuff, living lives that weren't interesting enough to write down. That's what we're seeing at the moment.
