So if I'm understanding this correctly... his body is moving at a speed that makes him appear dead, OR his brain is waiting to process the immortal function and thus temporarily ceased bodily functions until it has finished processing?

That's my interpretation of what he said at least.

So is his body actually decomposing or are they using the "slow" spell for no reason?

Yeah from what I got from that they were casting the slow spell for no reason
