Why are they trying to force someone, who doesn't eat meat for religious reasons, who has the power to heal and healed YOU with those religious powers - to sin and eat meat, or do things against their holy doctrine?
They should have made her more interesting and fantastical vegetarian dishes, not forced her to sin by her own beliefs.

Because it's not what her doctrine truly says, it's what the priest said and most likely isn't a normal part of it or better said it's another way of controlling her, much like the sugar and salt part, lacking sugar, salt and other nutrients in one's diet makes you weak wich in turn makes it hard for you to fight back. Plus looking at the priest he packing a few extra pounds. Pretty sure the priest eating a few stakes with the donation money he just got.
As for the last part of your comment. Yes I know right so many ways to make delicious vegetarian foods that look appetizing yet they made some of the most boring vegetarian dishes possible or better say lack of. Except bread, bread is always good. 🥖🍞🥐 i like bread
