Tl;DR: the oldest canned food has been eaten recently with no problems. As far as we know, it lasts a damn long time.

The problem of canned food is mainly due not to the food (which being treated and vacuumed has therefore no way of forming bacteria or mold) but by the container itself. the aluminium or plastic that holds it can be damaged, and allow pathogens to get inside and damage the food. but if everything is properly stored (in the dark, in an enclosed and possibly non-acidic environment that corrodes the packaging material) it can last for decades, perhaps centuries without any problem.

I'd say it's more likely Japan's been abandoned 80 years at most rather than 260. Buildings still in good shape, plenty of legible signs, much found clothing and even cheap jewelry in usable state.

And that also puts the cans back into a fairly acceptable range of being edible. :D
