Spoiler: About the knight and lady...

Got it in one. From this fight Snow's fully aware that the other two are the stronger party and can wipe the floor with them. She's just bad at talking so she usually doesn't unless she has to bark orders. However, it also feeds into an act- she KNOWS she's not the strongest out there, so she cultivates the ice queen personality so that she can seem more intimidating than she is, and so can BS her way through political drama better. The knight is pretty bog-standard, however; thinks her lady is the greatest thing since sliced bread and can't stand Elma being Just Plain Better than both of them. Fortunately, she doesn't let it ruin her good sense, she just dislikes Elma because of it.
