It's "I couldn't care less" if you want to imply that you don't care at all. In this context, Yamato seems to not care about an injury, so it should be "couldn't" rather than "could".

Even though "could" doesn't really make sense, it's still used often enough in English that I wouldn't consider it a mistranslation, and considering how dumb the MC is it kinda fits his character
