Translation note - the chicken dish here is a Sichuan Chinese dish called Koushuiji/口水鸡 (mouthwatering chicken), or Yodare-ji/よだれ鶏 in Japanese.
It's boiled chicken in a red chilli oil and Sichuan peppercorn sauce, meant to be spicy, savoury, sweet and numbing.
