I have no idea why bikini sisters decided to posses living beings but I have 2 things to say:

1. I have no objections regarding this.
2. I'm happy that they didn't decide to posses men.

This minor plot was supposed to be covered later on (when compared to WN & LN).
They probably covered it early, to not waste time later on.

Basically, this was deviced as a method to help low level people to gain levels quickly which helped increase their base stats and strength.
Plus because the armour sisters had weapon skills, so if someone without such skills equipped them and used their weapons skills, they would more quickly gain the said weapon skills (aka., if normally a person without innate weapon skills tried to gain them, it could take them years of practice; but this armour ghost equip method allowed them to gain the same skills within few days or weeks).

The Ghoul's aren't really Undead in this series.

They just share the same ancestory as Vampires in this series (they are said to be descendants of the Twin of the True Vampire Progenitor, both born from the Goddess Vida & the revived body of the Fallen Hero).

So, while Ghoul's like Vampire are related to the Death attribute, they themselves aren't Undead, unlike characters like the Fire Ghost Gaint Princess Levia or the Armour Ghost Sisters Saria & Rita or the Zombie Giant Borkus.

Biggest difference for Ghoul's is the fact that normal weapons can kill them easily, unlike with other Vampires or Undeads.

In WN, this fight happened between the main three adventurers, the villagers, the member of first village (who voluntary became vampires), golems, the ghosts, and the bugs Van tamed VS the troop. There were no named squad leaders. It was specifically said that Van linked his soul to every allies to provide them with "Death Sense", healing, and other supports. He also deal with the fake priest away from the villagers. In this version, the fake priest only cared about his own survival. So Van off him.
