K for real, Fullmetal Alchemist: Brotherhood. That's one of the easiest ways to make someone join in the weebdom. Then I can reccomend Eromanga-sensei so that they will become a fellow lolicon and an incest connoisseur.

Just one anime? Damn that's a hard one. I would say that if you like more action then Hellsing Ultimate or if you like drama and story then Steins;Gate

Manga would be hard as well, i really think that i would ask the person what he/she likes. Romance? Drama? Action? Tragedy? Comedy? So on.
Drama/Romance: Jumyou wo Kaitotte Moratta. Ichinen ni Tsuki, Ichimanen de.
Historical with strong female protagonist: Kusuriya no Hitorigoto
Adventure/Comedy: Spirit Circle
Action/Triller/Post-Apo: Blame!

I would even change my answer based on age or gender. I guess i wasn't helpful.

Nobody mentioned Doraemon ? It's the first manga i've ever read .

I simply joined the weebdom after Gundam series . 00 , Iron-Blooded-Orphans , Unicorn , AGE , etc . And the next thing i knew i've involved myself in the 2014~2016 World Waifu War .

fyi , that's oregairu (2014 , Yukino vs Yuigahama) , nisekoi (2015 , Chitoge vs Onodera) , re-zero (2016 , Rem vs Emilia)

Probably Princes Mononake to get them into Ghibli.

Even a causal observer who's not too well-versed into animation could recognize how well-done it is, and how well-written it is, and it could better introduce them into Eastern methods of story-telling without being too alienated.

Once they've watched a few Ghibli films, I'd probably get them to watch some of the more philosophical anime like NG:E and Ghost in the Shell and just gradually work them outwards.

You have to put your best foot forward.
