I belive Carlo Zen is working as an adviser on the manga, so it may be stuff he though of after and why it fits so well in the story

For example, ask him to write an additional subplot that could complement the manga or, conversely, mangaka ask him to make sure that their subplot fits well with the original story?

I can see that, kinda like SAO Progressive improving the OG Aincrad arcs.

If we develop this topic, it is also possible that it was in one of the side stories or chapters that the manga inserted into the general narrative for simplicity. You can sometimes see this in manga or anime adaptations as a solution to the bonus content issue.

I think he's a manga original. I don't remember him showing up in the LN. There's been a number of Manga original sub plots up to this point.
