Wow, that's hard. I've been mostly reading trash, to be honest.
The first thing to come to mind is Overlord, I guess? It plays out like a lot of light-novels, but its emphasis on gore and violence made a bit uncommon. I think it got copyrighted, so if you want to read it online (yar-har), you'll need to use the wayward-machine / internet-archives.
Kumo Desu Nani ka is another one. Doesn't break a whole lot of molds, but it's fun. It can totally be seen as absolute garbage, though, depending on your sensibilities.
And in the same fantasy-ish vein of light novels, I can rec the Warhammer 40k Horus Heresy series. I read the first book, and I had fun. I can send you a link for the ebook if you want, got it off humblebundle.
And regarding visual-novels, if you want fantasy, go read Fate/Stay Night. Slightly less-fantasy, is the Muv-Luv trilogy (which is arguably the best VN series in the market, according to VNDB :v)
In terms of manga / comics / whatever...From 10 minutes of looking through my read list --
DoroHedoro. Gruesome, long story, can be a bit shounen-dumb. One of my fav manga since highschool.
Ride-on king is a pretty popular (actual) isekai.
Peerless dad. Another popular choice. It's Wuxia, without the idiotic young-masters to piss off the MC for breathing air.
Chio-chan no Tsuugakuro. Comedy manga that's hard to describe. It moves forward enough to not get annoying.
Hinamatsuri is another comedy manga that I adore. Again, it actually moves forward. The moment the author realizes the jokes got stale, he dumps them and moves on to something else, thank god.
