Yeah, it's a bit of a bold claim. Kariya seems to believe there's an objective 'good' flavor, and any personal preferences are just the person not awakening to that flavor yet.
Author sometimes just miss ngl. Best thing to say is he... tried

Still mad the guy is doubling down on the thing about chablis pairing with oysters is bad. Like, sure, my info on why it actually is good is from another manga, but come on now. This is just arrogance at this point.

For what it's worth, I don't believe what he's saying either, despite translating it. It feels like he's putting an entire country's worth of people under the bus for 'following the trend' instead of the more likely possibility that different cultures have different tastes.

Oishinbo's world works on the principle that taste is objective and people cannot say something is bad when they know it's good. As long as we recognise that this is not how reality works, I don't mind visiting this space every so often.

Yeah, not you. The author. Like, for the most part I can ignore the author's snooty comments about food, but every now and then there's just something in the chapter that comes across as really annoying.

I'm rereading old chapters and saw that in my older comment up there I never did mention what the problem was.
According to the other manga I read it's not a matter of taste, but literally the wine selection is wrong.
Supposedly the wine called "Chablis" has different varieties, and there's kinds that pairs well with raw oysters and other kinds don't.

I'm no wine expert either, but when I searched for it the food guides did say that not all kinds of Chablis are a good match for raw oyster. Especially the most expensive/fanciest Chablis are supposedly best for cooked oysters and not really recommended for raw. That seems to be the mistake there, that people just randomly pair the most expensive wine with the oysters to act all fancy-like, since they didn't know the different kinds of Chablis taste different.

Like yeah, the author is also kinda being hypocritical about what makes food good. They had that big chapter about how blue cheese and matsutake stinks, and later a Kanto vs Kansai flavour, so the author should know that whether you think food taste good is a matter of culture sometimes. The problem here specifically was in having the proper knowledge about the food and wine pairing, though. After many many other food flubs in this series, I wouldn't be surprised if it's just because the author just have poor knowledge of wine and at the time there aren't enough reliable wine experts that could guide him properly.
